FIRMENICH SHOWCASES CULINARY EXCELLENCE & PASSION FOR TASTE

Geneva, Switzerland, May 30, 2015 Celebrating its creative excellence, Firmenich recently held its annual Culinary Science event in partnership with the University of Geneva and 2-star Michelin Chef Claude Legras.

Exploring the relationship between Gourmet food, science and the flavor industry, this year’s event’s theme was “Excellence in Plants: from Biology to Culinary,” with a focus on onions, one of the most ubiquitous culinary ingredients. Held at Le Floris Restaurant, near Geneva, Firmenich’s TechnoChefs® partnered with world-renowned Chef Claude Legras to delight their guests, including Nobel Peace Prize winner Prof. Martin Beniston, as well more than 20 Firmenich customers from around the world, leading science professors and government officials.

Led by the Dean and Vice-Dean of Geneva University, the group engaged in a lively discussion on the role of onion, as a taste enhancing ingredient. Key topics included the biology of onion, its unique aromatic chemistry, its culinary benefits and nutritional profile. A gourmet meal celebrating the onion rounded out the evening, featuring a range of natural onion extracts, as well as a bespoke olive oil dressing, developed by Firmenich and Chef Claude Legras.



Building on this event, Firmenich TechnoChefs® offered its customers a world tour of culinary experiences from Southeast Asia and Italy to the Southwest U.S.A, during a series of workshops at the company’s global headquarters. Flavors experts shared insights on Firmenich’s technologies and latest culinary trends, and a Firmenich Perfumer animated a Smell the Taste experience, demonstrating the close connection between odor and sense of taste.
