The selection of the best coffee cherries, the meticulous harvest and maturation, are fundamental to obtain high quality coffee.
While approximately 60 species of coffee are identified, just two are mainly grown and used :
Coffea Arabica or Arabica Coffee, accounting for 85-90% of world production, grows at high altitudes (Central America, South America, East Africa) and contains between 1.1% and 1.7% caffeine.
Coffea Canephora or Robusta Coffee, representing 10-15% of world production, grows at low altitudes (West Africa and Indonesia) and contains between 2% and 4.5% caffeine. Firmenich coffee beans selection follows a precise roasting process to develop the perfect balanced organoleptic profile.
