Mint is a perennial plant crossing two main families, each recognizable by their specific aromas: spearmint is sweet with carvone while peppermint is fresh with mentol. Most of the spearmint production comes from China and India and is extracted as as a commodity oil. Smaller productions are done on the nothern hemisphere where the quality allows the leaves to be used directly.

American Mint Spicata earns a high reputation for its quality, usually considered far superior to Indian spearmint. Independent medium size farmers allow the leaves to dry for 2 days in the field and then proceed to distillation, normally twice per season.
