Native to Southern Europe and Western Asia, Clary Sage is cultivated for its stems and leaves. The entire plant is aromatic, covered with tiny glandular hairs that contain essential oil. When it is ready to be harvested, tiny drops of essential oil are visible on the stems. The above-ground parts are harvested during the blooming period and are left in the fields to dry. The production of clary sage is present today in the south eastern part of France, China, Crimea and the USA. There are more than 450 species, all from the same family of labiatae, that grow wild in these temperate regions.
