India
dsm-firmenich sources its Fenugreek from small independent farmers in the northern Indian states of Rajasthan, Gujarat and Madhya Pradesh. India is the world’s largest producer, consumer and exporter of fenugreek, with an annual production volume of around 1,200,000 tons.
The harvest takes place between March and May, as soon as the fenugreek pods turn from green to yellow. The pods are sun-dried for a few days before winnowing to remove the seeds. Fenugreek is then graded by quality and delivered to our Indian supplier for extraction.
