In China, tea leaves are harvested 3 times, but the first crop is of the highest quality. Sometimes farms can collect a 4th crop depending on the weather conditions. A fermentation of the leaves follows, and the duration is defined by a part of the organoleptic profile. In China, tea leaves are warmed in ovens just after being harvested.
